RECIPE FOR CROCKPOT SMOTHERED CHICKEN WITH RED POTATOES!
If you are like our family, your evenings are packed with all kinds of activities and sporting events. Because of that, I have been dabbling with some crockpot recipes. I love to cook so it has been fun to try several different ones. This is one of my family’s favorite also, even the kids love this. They actually all gave it a 12/10 (Jamie and the kids) so I would say this is a keeper for sure:) It takes approximately 4-5 hours to cook.
Here is the recipe:
INGREDIENTS:
4 chicken breasts, skinless & boneless
1 medium onion, sliced
1 pint fresh mushrooms, sliced
2 cloves garlic, finely chopped
1 can cream of chicken soup with herbs
1 can cream of mushroom soup with garlic
1 can French Onion soup
2 pound red potatoes, sliced (medium)
Step 1
Cut the chicken into chunks and brown in a small amount of olive oil. Once cooked remove from pan and place in bowl.
Step 2
Saute onions until almost soft. Now, add mushrooms and garlic and sauté
Step 3
Slice the red potatoes (medium size) and then layer them in bottom of crock pot. Add 1/2 of the onion, mushroom, garlic mixture. Add all the chicken and then top with the rest of the onions, mushrooms, and garlic mixture.
Step 4
Empty all 3 cans of soup into sauté pan. Stir and heat up thoroughly and then pour over chicken mixture.
Step 5
Cook on high for 4 hours or until potatoes are tender. (approximately 4-5 hours)
