Crockpot Salsa Chicken
If you are like our family, your back-to-school days are packed with all kinds of activities and sporting events. Because of that, I have been dabbling with some crockpot recipes. I love to cook so it has been fun to try several different ones. It is super easy to make and only takes approximately 4-5 hours to cook. This is one of my hubby’s favorite meals I make. He gave it a 12 out of 10, LOL:) It is absolutely delicious.
Here is the recipe:
INGREDIENTS:
2 lbs. chicken breasts, boneless and skinless
1 cup salsa, homemade or store bought
1 cup petite diced canned tomatoes
2 tbsp. taco seasoning
1 cup onions, diced fine
3 tbsp. sour cream, reduced fat or regular
Step 1
Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then add the canned tomatoes, salsa, and onions on top. Pour a 1/2 cup water over the mixture and set on low and cook for 4-5 hours. The meat is cooked when it shreds or reaches an internal temperature of 165°F.
SERVE:
When ready to serve, break up the chicken with two forks then stir in the sour cream. We served ours in individual flour tortillas and added tomatoes, lettuce, and cheese. It is simply AMAZING!!
