This is such a hearty meal and the recipe makes enough for 2 meals. Those are the freezer meals I LOVE. You can omit the broccoli, but our family loves fresh broccoli and it adds a little more flavor to this meal. We only used 1/2 of the ham for this meal and used the rest on our breakfast burritos.
Freezer to Crockpot Scalloped Potatoes and Ham
This is also a very easy meal to prep. The most time consuming part is slicing the potatoes. When doing any freezer meal with potatoes, always put them in the bottom of the freezer bag, so they do not turn brown/black. You can also do frozen potatoes or add your potatoes the day of cooking. I prefer doing all the prep work at one time. That way I can just dump it in the crockpot and not have worry about anything else. After all, the object of this is making busy days easier.
For all freezer meals make sure to label your freezer bag with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
- 12-14 potatoes cut into ¼ inch round slices or a large bag of frozen potatoes (make sure to layer potatoes in bottom after blanching them or add day of cooking)
- 2 – 10.5 oz cans of cream of potato or cream of chicken soup
- 2 cans water
- Small ham (we only used 1/2 of ham pictured above)
- 8 oz cheddar cheese or cheese of your choice
- 4 cups of broccoli (either fresh and blanched or frozen broccoli)
- salt and pepper
- Divide the ingredients evenly between two gallon sized bags,
- Put the shredded cheese in a sandwich bag.
- Label meal, directions, date, and freeze up to 3 months
- Allow to defrost overnight in the refrigerator.
- Cook on low for 8 hours
We love to serve this with corn, salad, and dinner rolls.
Here are some other awesome things about freezer-to-crockpot meals:
- Most of these meals require no cooking ahead of time, so that means the recipes are very easy to prep.
- The meals cook for the first time out of the freezer so they don’t taste like leftovers (BUT leftovers are okay right?!)
- For us that coupon, we can take advantage of all the sales and freeze a couple at a time. (Most freezer meals will last for at least 3 months.)
