Our family loves Chinese food so we were super excited about this meal also – Kung Pao Chicken. This meal is a little spicy so may not be as kid friendly, but our kids love spicy foods. You can also tweek it so it is less spicy.
Freezer to Crockpot Teriyaki Chicken
This meal requires is a little bit of prep work by slicing chicken, peppers, and green onions, but that is what meal prepping is about 🙂 We found that cutting the chicken into thin slices works best. Mix everything up in a bowl and spoon or pour into the freezer bag and seal. You add less peanuts, but we do like the added texture/taste of the peanuts. When it’s time to eat just make your favorite white rice and serve. This meal has also become a BIG hit in our family!
For all freezer meals make sure to label your freezer bag with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
Ingredients:
- 1.5 lb boneless, skinless chicken breasts
- 18.75 oz – Kung Pao Sauce
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 bunch green onions, diced
- 1 (8 oz) can water chestnuts
- 1/2 cup peanuts (we love peanuts)
- Mix ingredients in a gallon-sized freezer bag. (you can choose to add peppers before cooking as they do tend to get a little soggy)
- Label meal, directions, date, and freeze up to 3 months.
- Allow to defrost overnight in the refrigerator.
- Cook on low for 5-6 hours
- Optional: To thicken sauce at end, whisk together 1/2 cup cooked sauce with 2 Tablespoons cornstarch and pour back in the slow cooker.
- Turn crockpot on high for an extra 10-15 minutes so sauce can thicken.
Serve this over rice.
Here are some other awesome things about freezer-to-crockpot meals:
