Who doesn’t like Chicken Fajitas!! The only thing this dish is missing is the SIZZLING SKILLET!! There is a bit more prep work to this one. A lot of slicing and dicing. However, if you’re like us and spending some time in the kitchen preparing all these freezer meals together, you can do it for all the meals at once. Then it’s just assembly line the rest of the way!
Freezer to Crockpot Chicken Fajitas
Before you dish it up, you will have to pull the chicken and shred it with 2 forks and then place back with the peppers and onions and place in a bowl. Serve with warm tortillas adding sour cream, pico de gallo and your favorite salsa. We also like to serve Spanish Rice and refried beans as a tasty side.
For all freezer meals make sure to label your freezer bag with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
- 2 pounds of boneless skinless chicken breasts (fat trimmed) – can slice or leave whole
- 3 bell peppers, sliced (green, red, and yellow)
- 1 small onion, slicked
- 1 tsp minced garlic (or 2 cloves of fresh garlic)
- 1 tablespoon honey (adds flavor – optional)
- 1 tablespoon apple cider vinegar or rice vinegar
- 1 tablespoon chili powder (optional)
- 2 teaspoons cumin (optional)
- 1 teaspoon paprika (optional)
- 1/4 teaspoon crushed red pepper flakes (optional)
- Label the freezer bag with the name of the recipe, cooking instructions, and prep date (can freeze up to 3 months)
- Combine all the ingredients in a gallon-sized freezer bag.
- Allow to defrost overnight in the refrigerator
- Dump in crockpot and cook on low for 6 hours or until chicken is tender.
- Shred chicken and serve with peppers and onions in flour tortillas
- You can also freeze the tortilla patties so you know you have them when ready to prepare.
Here are some other awesome things about freezer-to-crockpot meals:
- Most of these meals require no cooking ahead of time, so that means the recipes are very easy to prep.
- The meals cook for the first time out of the freezer so they don’t taste like leftovers (BUT leftovers are okay right?!)
- For us that coupon, we can take advantage of all the sales and freeze a couple at a time. (Most freezer meals will last for at least 3 months.)
