These chicken meals are awesome to do when you can snag chicken for $1.69/lb or less. All the chicken freezer recipes are very quick to prepare, yet, they make for a very hearty, healthy meal.
Freezer Chicken, Broccoli, and Rice Casserole
This is a smaller meal, so we actually made two of them so we have enough for our family. This is one I am very much looking forward to eating.
For all freezer meals make sure to label your freezer bag with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
Serves: 4-5
Ingredients
- 3-4 chicken breasts
- 1 cup long grain rice
- ½ teaspoon onion powder
- 1 can cream of chicken
- 1 cup shredded cheddar cheese
- 2 cups broccoli, diced (best to blanch broccoli or add day of cooking)
- 1 ½ cups chicken broth
- Salt and pepper
- Extra cheddar cheese for topping
Freezer meal directions:
- In a 9 x 9 aluminum tin combine rice, pepper, onion powder, cream of chicken, cheese, broccoli, and chicken stock. Mix until combined.
- Lay chicken on top of the rice mixture. Space evenly.
- Label with name of recipe, cooking instructions, and prep date (Can freeze up to 3 months) – triple wrap with aluminum foil so it does not get freezer burn
- Allow to defrost overnight in the refrigerator.
- Cook covered on 375 for 50 minutes
- Uncover, top chicken with cheese, and bake uncovered for 5 more minutes
We like to serve this meal with a small side salad
Here are some other awesome things about freezer-to-crockpot meals:
- Most of these meals require no cooking ahead of time, so that means the recipes are very easy to prep.
- The meals cook for the first time out of the freezer so they don’t taste like leftovers (BUT leftovers are okay right?!)
- For us that coupon, we can take advantage of all the sales and freeze a couple at a time. (Most freezer meals will last for at least 3 months.)
