Oh Boy!! Stuffed green peppers are awesome!! We made two batches of this. It is relatively easy. Slice the tops off and use a spoon to clear out the inside of the green peppers. Give them a quick rinse and they are ready to be stuffed.
Freezer to Crockpot Stuffed Green Peppers
My friend, Robin, suggested with the leftover meat to make meatballs. This is a great idea, because our son, Jonah, does not like the green peppers, but he loves meatballs. Now we don’t have to make an extra meal for him. Thanks for the great idea Robin!
For all freezer meals make sure to label your freezer bag with the name of the recipe, cooking instructions, and prep date. Freezer meals can be frozen for up to 3 months.
- 1 tablespoon olive oil
- 1.5 lb ground beef
- 1 medium onion, diced
- 1 teaspoon minced garlic (1 garlic clove, minced)
- 2 eggs
- 5 small bell peppers, tops cut off, and cleaned
- 24 oz jar of your favorite pasta sauce (reserve 2 tablespoons) – or you can make homemade pasta sauce
- 1/2 cup water
- 3/4 cup instant rice (not cooked)
- Salt and pepper
- In a large bowl mix ground meat, onion, garlic, eggs, rice, salt, pepper, and 2 tablespoons pasta sauce.
- Firmly stuff mixture into peppers.
- With leftover mixture, roll meatballs.
- Label with name of recipe, cooking instructions, and prep date (Can freeze up to 3 months
- Add remaining sauce to a quart-sized plastic freezer bag, seal, and place inside gallon-sized bag with stuffed peppers.
- Allow to defrost overnight in the refrigerator.
- Coat bottom of crockpot with olive oil
- Place peppers in and top with sauce.
- Cook on low for 6-8 hours
Serve this meal with white rice topped with the tomato sauce 😉
Here are some other awesome things about freezer-to-crockpot meals:
- Most of these meals require no cooking ahead of time, so that means the recipes are very easy to prep.
- The meals cook for the first time out of the freezer so they don’t taste like leftovers (BUT leftovers are okay right?!)
